$7.99/lb. A whole beef brisket (actually it’s a half, but people call it a whole) is approximately 12-15 pounds. 18-24 month, registered Angus steers born and raised in southwest Missouri. Cattle are on grass with a light grain ration added, 30 days prior to processing. Cattle are never on dry-lot to ensure a lean beef product. Beef is hormone-free and antibiotic-free and hung at 21 days for premium flavor. Packages are frozen, vacuum-sealed and can stay fresh in a deep freeze for 2 years. Beef averages 93/7 in lean/fat ratio. No aged cows/bulls.
